Kumakichi
The first time I went to a liquor store in Ginza, I heard the manager's enthusiastic speech and bought a bottle as a test, which turned out to be a big hit.
Mr. Naohiko Nouguchi, the best brewer in Japan, who is also known as "the god of sake brewing", finished this bottle on the occasion of his 88th birthday. 5,500 yen for a CLASSIC EDITION bottle was a price range that I would have been brave enough to buy on my own. But I bought it on impulse because the manager told me that it would change my view of sake.
I was a meek person who only looked for popular sake to drink, but this one gave me a complex change in taste that I had never experienced before.
If I were to use an analogy, I would say that it tastes like a perfect score on the radar chart that expresses the taste of sake. (Sorry for my lack of vocabulary)
Immediately after enjoying the rich sweetness and umami from the tip of the tongue from the first sip, the pleasant acidity spreading to the left and right sides of the tongue, and finally the deep bitterness spreading to the back of the tongue and the pleasant alcohol feeling remaining in the throat were an irresistible taste.
According to the manager, he is a "living national treasure of the sake association" who spread Yamahai and Ginjo-shu to the world, so we could enjoy the taste of sake that has been carefully selected.
It is expensive to drink every day, but it is one that I would like to revisit from time to time.
