<Classic - deliciously bitter, a perfect food wine.
This is a new sake from Senjo, a sake brewery in Ina City, Nagano Prefecture. This sake is a limited edition sake for the Shinshu Jizake Hanpukai, which is organized by Jizakeya Miyajima, a hard-core sake shop that only sells local sake from Nagano Prefecture in Shinshu.
The aroma is a hint of lactic acidity.
The mouthfeel starts with a hint of lactic acidity, and after the entire bottle is softened, it is gradually followed by a deliciously bitter taste.
It is a classic dry sake. The sweetness is only momentary. Because of the bitterness, it is better to drink it with a side dish rather than on its own.
As it warms up, the bitterness and acidity come to the center and stand out. I liked it better served cold.
If I were to use a Ghibli analogy, I would compare it to Akio Kazama in "From Up On Poppy Hill. He is Shun Kazama's "father. He is blunt and classic Showa-era father, but he also has a mischievous wit as he winks at his son who has brought his girlfriend.
