I have been interested in Shichida for a long time, but never got around to drinking it, so I went to buy it at a local store.
The 17% alcohol content is strong, but the aroma alone is enough to give it a sweet pop.
It smells and tastes amazing, like a lactic acid drink! It's almost like a cloudy sake because there's a lot of tailings, but the flavor is just as good.
The shwashy texture on the tongue is pleasant and easy to drink. If it were not for the fizzy taste, it would not be so easy to drink.
In fact, the umami and bitterness are so strong that it may not be accurate to say that it is easy to drink.
It is dry with little sweetness, but the umami is strong and powerful. It is a mellow umami.
I paired it with a hamburger steak in a thick demi-glace sauce! Because it is a strong sake, it went perfectly with the strong flavors!
