The same fruity aroma as on the top palate, a full sweetness and a slight umami of rice, along with a linear acidity, spread out with a slight gassiness, and finish with a slight bitterness and a smooth finish.
Although it is fire-aged, it is fresh and sweet, but thanks to the well-balanced acidity, it can be drunk neatly and is easy to match with meals, and of course, it is delicious on its own.
It goes well with eel on top of a bowl of rice.
