Kaze Yawaraka Junmai Ginjo-shu
⭐️⭐️⭐️⭐️ Polishing ratio 60%, ALC 16%.
The aroma is subtle, and the mouthfeel is slightly tangy on the tongue, making it a dry sake.
First encountered in 2017. It was a junmai sake. ☺️
I was impressed by the sake because it had the same name as "Fuwa" in the preface to the 32 poems of Umehana (plum blossoms) in the Manyoshu, the oldest anthology of Japanese poetry and the source of the quote for the new Japanese name "2021".
