Last stop today was at Bakuren. This is the first time since January this year that I have had a very dry wine. Polishing ratio 55%. Alcohol content 17%. Brewing alcohol The mouthfeel has umami and a hint of sweetness, but it switches to dry and spicy 😊. The impact of this switch is still impressive 🍶. The entrée was deep fried mehikari and sumo wrestler miso cucumber (🥒), which I haven't had since my trip to Miyazaki. I ordered the Rikishi Miso Cucumber because I saw another customer ordered it and it looked delicious, but in essence, it is a garlic meat miso that was the perfect combination with Bakuren-san 😋.
