I was stressed to the max from work and the humidity, so I couldn't resist opening a bottle of the limited edition sake I bought at Mori Sake Brewery's brewery opening 😅!
This one is brewed with "HY2" yeast and their specialty rice "Nikkomaru" 😊.
I drank it at the brewery opening, but I could only drink one cup, so I drank it slowly and generously in a wine glass at home 🍷.
First of all, the top aroma is a bit like melon and pear 🤔.
Then, when you take a sip, you feel a nice sweetness first, then the umami of the rice spreads rapidly, and since it is unfiltered raw, there is a sense of gas and some acidity 😊.
The sweetness, umami, acidity, and gasiness are in perfect harmony, and the lingering taste is medium to slightly long, finishing with a pleasant mild bitterness 😋.
What sake would you recommend? If I were asked what sake I would recommend, I could immediately answer "Hiran".
