This is the first time I have had Yamada Nishiki from Yamazan. The aroma is more acidic, muscat, and rice. A little more classical than usual. When you drink it, you get a fresh, woody aroma of muscat on the nose, followed by a light sweetness and a gentle umami flavor. When paired with food, the full-bodied acidity is more perceptible and good! The next day, it has an apple-like acidity and richness. On the first day, I thought it was not so much like Yamazan, but I like this mild acidity. On the third day, the aroma is more citrusy and sour. No chili when you drink it. The taste is fruity but calm, like muscatel, citrus, and mild apple. The richness spreads slowly and the acidity tightens up at the end, and there is a slight alcohol sensation down the throat. It is delicious on its own, but you can enjoy it even more when paired with a meal.
