This is Inamuraya's hiyaoroshi.
It's hiyaoroshi, but it's still raw 🤔.
I think they should just call it "Nama-aged" like Chochin without forcing themselves to call it "hiyaoroshi" 🙄.
The aroma is melon sweet with a hint of spiciness.
When you take a sip, it has a slight sweetness and a firm umami flavor.
It finishes with a slight spiciness.
We enjoyed it with thick shiitake mushrooms sauteed in butter from Owani Town in the third picture. 🍄🟫😋
