M-ban, a dark, purplish dragon, is the newest addition to Takachiyo Shuzo's Kouriu series, the strongest regular sake. It is said that the rice used is different from that of Akaban, which is also a fire-aged version of Koryu. And the "M" in M-ban is said to be the "M" of Minamiuonuma. (Seriously?). The "M" in "M-ban" is the "M" of Minami-uonuma (seriously?). The brewer's hometown, Minamiuonuma City, Niigata Prefecture, is home to the Takagami Shrine (Koroku Shrine), which is a shrine for water goddesses. Takagami Shrine enshrines the god of weaving, and is said to have a long history that is connected to the origin of one of Japan's 100 most famous mountains, Makiki-zan. The brand name, which used to be attached to the highest quality sake, has been revived and is now attached to aluzake. Slightly mild Muscat, Soft, Well-balanced sweetness and acidity, It has a clear bitterness, firm umami, and sharpness, It has a refreshing bitterness, a firm umami and a sharp taste.
