Hiroshima Nishiki" sake rice was named "Hiroshima Nishiki" in the early Showa period (1926-1989) with the aim of becoming the highest quality sake rice. However, the sake rice "Yamada" has been widely used as a sake rice in Japan. However, it was revived with the cooperation of farmers in the prefecture, as it had the same sake brewing aptitude as "Yamada-Nishiki" sake rice. Hiroshima Nishiki" is a junmai-shu brewed with the unique flavor of "Hiroshima Nishiki" sake rice. The yeast used is the Kamotsuru yeast (Association No. 5 yeast), which in 1921 took first through third place at the National Sake Competition.
