I received a bottle of Tenmei, a sake from Fukushima, which I was a little curious about. The label is sky blue and beautiful. According to the description, it is a food sake with a balance of acidity and sweetness.
I thought it would be a fruity type sake since it is junmai honmai, but it had a strong rice flavor rather than a fruity one. I thought it would be a bit different for different tastes when served cold, but after a few days, you will be hooked on the flavor.
Because of its rice flavor, I thought it would go well with strong flavors such as meat dishes. Also, when served at a slightly higher temperature, such as hot or room temperature, the bitterness is reduced and the sweetness increases, making it quite good. I think it also has a melon-like sweetness at room temperature.
