I was actually going to make the closing post for 2022 on New Year's Eve, but I couldn't access Sakenawa, so I changed it to the first post of the New Year.
I will be at my wife's parents' house on 12/30 and then go straight to New Year's Eve. I had to go to a famous restaurant in Shimizu to get a bottle of Senkou.
It has quite a lot of ochre. The aroma is mild. It's hard to describe, but it's a bit semi-citrusy. Surprisingly, it has a strong gaseous taste.
There is a refreshing sweetness and a crisp acidity. The umami is strong.
The acidity is cut off early, and the umami continues until the end.
The umami acidity gives the impression of being quite unusual. It is dry and perfect for strong dishes at the end of the year and at the beginning of the year.
Now, after returning to Tokyo in the evening, I will open that sake I have been keeping....
