TOYONISHIKI, 70% polished rice, 12% alcohol
This sake is made by fermenting freshly squeezed sake in the bottle.
It is dry, shriveled, and champagne-like 🥂.
The sweetness and refreshing acidity are impressive!
Shimizu Odayaka Junmai Ginjyo Ususu Nigori Nama-shu
Miyamanishiki, 60% polished rice, Sake degree 15.5
The ginjo aroma is reminiscent of peaches. It is as sparkling as a sparkling wine. Refreshing with a good balance of sweet and sour.
Well, I've never had a sake like this before because I've only had Niidashi Sanshu...
