I rummaged around in the cellar and found three bottles of Yuyamanishiki today.
When you drink the supernatant, you can taste the sweetness and then the bitterness. But it is delicious because it is a bitter taste with a good flavor.
The bitterness increases when you mix them together. But it also has umami (I'm going to say this twice because it's important 😆 ), so it's more rewarding to drink.
I think it is a unique brewing method, but it is delicious 😋.
