It's Changzhou's New Wave!
Junmai Ginjo Nigori Nama Sake
It is also called "Aoten".
It is said that the name comes from the color of the label on the back.
Shimonoseki is proud of this beautiful sake, which has quickly risen to national popularity over the past year or two.
Silky on the palate with a great balance of bitterness, umami, and acidity (I feel like I say this all the time 😅)
The bitterness in particular is superb❗️.
This bitterness and the fine sparkling feeling of the fine bubbles make the aftertaste short, clean, and light....
