In addition to the Mitsui no Kotobuki series, we are currently releasing the Mita series, which produces a powerful, deep, mellow flavor derived from Yamahai sake brewing. The Mita series includes the super-dry Shinjo, a slightly sweeter, year-old Kojo, and the well-balanced Houjo, which falls somewhere in between. As the name suggests, the dry brew has a dry and refreshing aftertaste. It has a full-bodied flavor and umami taste derived from Yamahai.
