寫楽 Junmai Ginjyo Nagoshizake - One time heating
When we think of 寫楽, the overall image is one of sweetness.
If you think so...
The sweetness is definitely present in the aroma. But it is mild and refreshingly fruity.
Even when you drink it, the sweetness is still mild. It has a matured feeling. The umami is strong. Bitterness that can be felt afterwards. And it's really delicious with a nice sharpness.
And then I thought about the heated Bizen Omachi sake we had the other day.
This was also...
So I warmed it up to lukewarm.
It has a warm and gentle aroma.
It has a deeper umami, matured and sweeter taste than cold sake.
Maybe it's better warmed...
I'll try raising the temperature a little more today 😆.
