The second sake is "Shinshu Kamerei Nagano Yamae Nishiki Junmai Ginjo" 🍶.
Yamae Nishiki is not yet available this season, so it is said to be from last BY.
Personally, it has been a long time since I have had a Shinshu Kamerei!
The exterior is a nearly transparent silver crystal.
The aroma is intoxicating with a fresh sweet fruity ginjo aroma.
Aromas of apple, pear, and melon are mellow, yet not overdone.
The rice aroma is about the size of a white dumpling.
The texture is smooth, with a hint of dusty gas 🫧.
The juicy sweetness spreads with a strong fruity sweetness coupled with soft acidity.
There is a sense of coolness escape, but also a beautiful flavor flow.
The balance between the firm, dark flavor and the clear smoothness is intoxicating.
The finish is crisp and fruity.
It is still delicious. ☺️
The fire-aged version has been aged for more than half a year and has a softer texture, which is also intoxicating.
