Iwate Pref. Shiwa County. Shiwa Brewery Co. Shiwa Junmai Ginjo Miyamanishiki Unfiltered Unrefined Nama Sake This is the 6th bottle of SHIHU this season✨. The rice used is Miyamanishiki. By the way, the person who helped me with the tasting at Honami was Mr. Bungo Tanaka, the president of Sake Capital. For some reason, he gave me his business card for two different kinds 🤣. I asked him, "What about the other brewery?" I asked him, but he said he didn't have it with him today... I would have liked the Purple Space one anyway 🤣. I would have liked to have had the purple space one anyway 🤣 I had it with cold sake. It has a sour and sour aroma with a hint of grain. The mouthfeel right out of the fridge is a bit like a soda water that is a bit bland because the acidity is so mild and clear. As the temperature rises, the blurred flavor profile becomes firmer. The acidity tightens on the tongue, with a gentle bitterness and umami. The aftertaste is not so spicy, though it is a little tingling. I definitely prefer it when it is not too cold. Ingredients: rice (domestic), rice malt (domestic) Ingredient rice: 100% Miyamanishiki produced in Akita Prefecture Rice polishing ratio: 55 Alcohol content: 15%. Sake meter: ±0
