Sweet and sour aroma. However, there is little acidity, which is common in sake brewed using the traditional sake yeast. The smooth mouthfeel is full-bodied with a sense of rice. Classically, it has a punchy umami and sweetness. The acidity finishes it off with a slight sourness. It has a strong flavor, but it does not smell like alcohol or rice, which is an excellent impression. The title "aromatic and mellow" is understandable. It is a little expensive for the price, but it is delicious. It is a nice match with seared barracuda. Shokusai Tatsu, Kinshicho
