Hiyoroshi, which I had reserved! At first it was hiya. The aroma is mild. Different type from floral and fruity. Slightly acidic, fresh, and grapefruity. The aftertaste is alcoholic, but somehow it fits easily on the tongue and can be downed. Drink it cold two days after opening the bottle! It is easier to drink than hiya, but the umami is still there. I was impressed with the pairing of this sake with the head of the swordfish! The head by itself was just bitter, but when the sake was added, the umami showed its face... and the deepening umami aftertaste............umaaaaaaaaaaa......... I can't eat saury without "funei" from now on! The grilled satsuma-age was also a good accompaniment, but I think lukewarm heating would bring out the best. Thanks for the food! Next time, I'd like to let it sit longer before heating it up.
