Purchased at Maya. The price tag said "unfiltered". It may indeed be unfiltered 🤔. This is the first time to drink Taiheizan at home. It tastes a little bit gassy and has a strong freshness that is typical of nama-zake. It is sweet but has a complex taste with bitterness, spiciness, and astringency like green or grass. It also has some acidity. I wasn't expecting much, but it's delicious. The rice polishing ratio of 59% makes it sound like a sake from Nagano, Japan. On the third day after opening the bottle, the astringency increased and it became a little harder to drink, but I felt a cherry-like flavor that was not there on the first day.

Good evening, bouken😄. Kodama brew has a complex flavor, including bitterness and astringency 😆. It's a bit of a picky eater, but it's one of my favorites too 😁.
