I had been drinking the back but didn't know the front.
The color of the front side of the bottle is dark, which is surprising even for a mirin (sweet sake).
It has a strong sense of aging in the bottle, but it is surprisingly modest and moderately full.
The texture is clear and glossy.
It has a slight smoky flavor, like that of iburi goko.
The wine has a sense of unity of sweetness, acidity, bitterness, and umami.
It has a very rich, mellow, umami taste.
Surprisingly, the sweetness in the aftertaste is calm and not persistent.
To go with the stinky combination, we ordered seared dried firefly squid.
The savory flavor goes well with it.
It seems that there are different likes and dislikes.
The yellowish sake has a relatively easy-to-drink aftertaste.
