Kukura Yamadanishiki Junmai Daiginjo
The aroma is sweet, refreshing, full-bodied, and delicious.
Kukura Omachi Junmai Daiginjo
Compared to Yamadanishiki, it has more sweetness and bitterness, with a strong Omachi-like flavor. This one was said to be fast brewing.
Kukura Aizan Junmai Daiginjo
The Aizan was the most promising, but the umami was weak and light, a little too elegant.
Nanatsubai Namaishige Junmai Nama Shu Aizan
The aroma is sweet and refreshing, but it is full-bodied and delicious.
Hamafukutsuru Yuzu Biyori
It is so good, it is said to be the equivalent of 12 yuzu citrons.
I went there for the second time and was told that it was not, but the website still says it is made using the original yeast.
