About a 20 minute walk from Kyoto Station is a sake store with the best sake lineup. I can go there about once a season on days when I leave work early and have some energy left over, and that's how often I can go. On this particular day, I found a bottle of Tasake, limited to one bottle per person, over 6,000 yen for a bottle, but it's a fixed price. My eyes are looking in the fridge, but my mind is on the sake. If you're not sure, let's buy it," I said, and bought it. I let it sit for a while and open it today. By the way  this is the first time I've ever had a Gin Karasu. I looked online and saw that it went from development to commercialization in 2017 and is a cold hardy variety that can withstand yamase and can be grown in the same way that rice rice can be grown, mashugami. They call it a cold-tolerant variety. I think I'll try to tax that rice in my hometown. The heart white of Gin-Karasu-boshi is in the center of the rice, making it hard to crack when milling, and although it is hard, it dissolves easily during fermentation, making it suitable for everything from junmai to daiginjo. I can drink it very smoothly, but it's only one bottle, so it doesn't run low at all.
