🛩️ Ingredients: Rice (Hyogo Prefecture), rice malt (Hyogo Prefecture) Rice used: 100% Aiyama Rice polishing ratio: 60 Brewing method: Lactic acid-free yeast, wooden vat brewing Alcohol content: 16% (undiluted) Read as "Sen-sai"...that's enough 😅. Now, this is the raw sake that has been left to mature for a while (the label is all squishy). It is super thick. It has a strong umami flavor. And it is still bitter-sweet. But as I drank it, it became sweeter, and then the bitterness came at the end, but it was a "strange and mysterious" change in taste, different from the taste of the Aizan I know. I have already written about this when I drank it before. The brewing method is completely different, so I felt like I was drinking a completely different sake. This was fun. Well, my dream after that was a nightmare that I was on a business trip to Korea at the end of the month and I couldn't get back to the hotel and I was lost 😅I guess it means don't play around at night...
