Sake that I have a little bit of attachment to 🍶.
(6) Houraisen "Wa" Junmai Ginjyo Aged Nama Shu
It reminds me of "Sora" which takeshon-san gave me as a souvenir from the 1st off-line meeting 😊.
However, I am not sure if it is fresh or matured.
From the taste, I am sure it is not fresh at least...
I googled it and found out that it was kept in a tank as a fresh sake and matured for a year before shipping.
This makes sense 👍.
It's a limited edition, only shipped 3 times a year, so it's a rarity ❗️.
It is a beautiful sake characterized by its mild sweetness and soft taste 🤗.

Horaisen is really a deep sake ❗️.
I think it's great that Aichi is so advanced in fermentation and brewing technology, as well as miso and vinegar 👍️.
I must drink more Owari and Mikawa sake 😤.
