Masaaki Sapporo
8 points (wife: 7 points)
Alcohol content : 15 to 16 degrees
Rice : Yamadanishiki, Toyonishiki
Rice polishing ratio : 50
Sake Degree : +1 to +2
Acidity : 1.3
Purchased from Suzuden (Gift from my sister in Tokyo)
Shu when opened
No gassiness
Slight peach and grape-like overtones
The same gentle aroma as on the top rise, a slightly subdued sweetness and firm rice umami, which gradually unfolds with a soft citrus-like acidity, and finishes with a gentle bitterness and a smooth finish.
The balance of sweetness, umami, and acidity is just right, and the aroma is not too strong, so it goes well with meals and is also delicious on its own.
It goes well with pumpkin rolls, bitter melon stir-fry from my parents' house in Nagasaki, and boiled isotsubu (dried sea snails).
