Mizuo is another sake I wanted to try. The person who helped me was Takumi-san, the son of the sixth-generation brewer. He was a young man with an Afro-like perm.
The brewery is located on the border of Nagano and Niigata prefectures.
It is said to be brewed so that the bitterness of Kinmon-nishiki can be tasted.
It is brewed to suit local cuisine, and 85% of the brewery's customers are local and 15% are from outside the prefecture.
Mizuo Tokubetsu Junmai Kinmon Nishiki Brewing
It has a clean, clean taste with a strong umami and bitterness. The umami spreads slowly.
Mizuo Junmai Ginjo
The aroma is subtle, and the overall taste is clear. Prefer the special junmai.
Mizuo Ichimi
Sake meter rating +7. It has an umami aftertaste and is crisp and not too spicy. It seems to be popular at an eel restaurant near the brewery.
Mizuo Junmai Daiginjo
The base is the same as the special junmai. The aroma is fruity, with a bit of tasty acidity. It is also my favorite. It is intentionally made to be drunk at a leisurely pace.
Mizuo Ichihachi
It is said to be brewed for the sake competition. It is very sweet, full-bodied, and quite delicious. It is extremely delicious. Almost water.
There were many Mizuo's that were also delicious.
