I thought it would be sweet and tasty because it is nigori, but when I put it in my mouth, I found sweetness, acidity, and bitterness. Even the supernatant is mixed in. I was told that a yeast called Kyo no Koto is what makes sweet, sour, spicy, bitter, and astringent sake. It is an interesting and addictive taste. Well, I want to tell you to try it 😊.
