兎御殿
On October 23rd, I visited the Naminoto Sake Brewery in Kata, Shiga Prefecture.
The brewery runs a restaurant called Yohkaro, which is open only from June to September when the brewery is not making sake.
The building was renovated from the previous owner's residence, and the location was perfect, with a view of Lake Biwa through the pine trees in the garden ✨.
The fifth sake we were offered was a special junmai, unfiltered, raw sake.
It is made from Yamada-Nishiki with a milling ratio of 60% and an alc of 17.
As you would expect from an unfiltered, unfiltered sake, it was very drinkable and spread out in your mouth 😄.
