Today we will have Sairai's Altair. The aroma has a slight cemedine feel and a hint of alcohol.
On the palate, there is a strong acidity and umami, which lingers and disappears on the bottom. I also feel there is a sense of astringency in the latter half. This is the second bottle I have had at home, but it is a different impression from the previous sake 😲.
I've paired it with octopus and mushroom ajillo and peppers and mackerel cheese toast, and it's delicious. When combined, it seems to be somewhere between a white wine and a sparkling wine. It goes well with olives, garlic and cheese. Delicious✨
I'm digesting my reading pile over the three-day weekend 📕 I'm on target for 50 books this year and have 23 left to go. I can still get there 🔥.
