Ishikawa, Komatsu City. Kaketsu Corporation. KAGANOGETSU <Nama Hashiroshi> Junmai Hi-iri. Tasted at the Keihan Department Store Kuzuha Mall in Hokuriku sake fair, went to the bus stop and bought this sake back. We had it in a hiya. The color is clear with a slight greenish-yellow tinge. The top aroma has a strong alcoholic note with a caramel aroma at the back. The mouthfeel is soft and smooth, and the taste is elegant with a full flavor, followed by a gentle acidity that includes milky notes. I feel in love with this gentle acidity, and it is a gentler blend than Buffalin. Also, the taste is mild and unpleasantly bitter. It has a raw yeast-like character and is superbly balanced. Well, it is delicious! When served hot or warmed up, the thick umami and tangy acidity that stimulates the tongue become more pronounced, and the bitter bitterness on the aftertaste is refreshingly clean. When served lukewarm, it has a milky, caramel-like taste with a swelling umami and sweetness. The aftertaste is gentle and cohesive. It was good heated, but I think I like it best served hiya.
