I got my hands on a limited edition of Hououmita, which is the best sake in Tochigi Prefecture in my opinion. There were only a few bottles left at a sake shop in a certain city in Tochigi Prefecture, but my dad managed to sneak one out and I was able to get it. Thanks to Tochigi Prefecture People's Day!
The mellow aroma that spreads the moment you put it in your mouth reminds me of that of Lake Chuzenji and Senjogahara. It is clear and gorgeous. Fruity like a muscat. It is a gem that thoroughly draws out the original power of the ingredients and refines the power of the yeast. It is the ultimate sake that overturns the concept of sake.
By the way, we used a local dish of Tochigi prefecture, Shimotsukare, as a snack. I drank too much, and after that I reproduced the shimotsukare again.

A reminder of Tochigi. It was the number one dish I didn't like at school lunch, but it definitely goes well with sake! (I have a feeling).
I would like to have it again sometime. Along with Hououmida. Just not to the extent of being reproduced.
