Diplomorpha sikokiana (species of flowering plant)
Yellow. Smell of cooked rice + alcohol. Soft. Complex taste. Numb, sweet and a little bitter on the tongue when drinking.
I personally like it a lot. It doesn't lose out when matched with strong flavored food.
It is made from Inochi no Ichi sake rice, with a rice polishing ratio of 90%. They have been aging it for several years. The label is simple.

Stalls and musical performances outside. Inside the store, more than 15 kinds of sake tasting (all you can drink) for 500 yen: 990 yen for a limited 4-goupe bottle of sake, 2,000 yen for a daiginjo. Cosy!
