This is the first brewing of a Junmai Daiginjo made from 45% polished rice of "Kojonishiki".
Kojo-nishiki" is the first rice suitable for sake brewing developed by Aomori Prefecture. The Nishida brewery is the only brewery in Aomori Prefecture that uses Kojonishiki.
This rare sake rice "Kojo-nishiki" has a soft, full, mellow flavor, but it is also brewed at "shiwari gobu" (45% polished rice) in order to pursue a clean taste.
