Immediately after opening the bottle, sweetness, sourness, and astringency were all present. The gaseous taste was a sense of putting it all together. I think it will become more cohesive if it is allowed to sit. Personally, I think the acidity is more assertive. The sourness is more assertive than the sharpness. It became minus because of high expectation. Maybe it is a physical condition problem? Because of the sourness, I had it with a potpourri spicy miso motsu nabe.
