I guess gentle & balanced means you're a gentleman, right? That's me: ☺️ I'll open more because I don't drink enough. I'll open more because I haven't had enough to drink. I asked at the liquor store about a heavy one and they said this is the one they have now, so I secured it: ☺️ The aroma is lactic acidic like orikarami, and the taste is sour like yogurt or cheese. It is effervescent, and the mouthfeel is sweet, sour, bitter, and full, like a basic ogara-mi-shu. The taste is fizzy, and the mouthfeel is sweet, sour, bitter, and full, just like a basic orikarami sake. The richness and bitterness can be felt in the aftertaste, but it disappears quickly, so it is not persistent. It is a clear and bitter sake. The quality of this sake is well above that of other sake made in Japan. For my taste, I would choose Jun-Dai, but if you like orikarami and bitterness, I think you will be into it. ☺️
