Hozumitei's second cup is here 😆 Slightly yellow, a bit aged. Slightly yellow, a little aged, not twisted. It has a strong umami taste. It is like a Western sake. Combined with bonito, the twisting feeling disappears and it becomes smooth. I learned on this trip that bonito tataki is better with salt than with ponzu (Japanese citrus juice) 🎉.

I recommend coarse salt. I think the taste will be too sharp if you use normal salt.
If you use regular salt, the taste will be too sharp. I love it 😓.
