Daiginjo🍶. Kochi-Ehime train trip 🚃Day 2 Hozumitei's second cup is here 😆 Slightly yellow, a bit aged. Slightly yellow, a little aged, not twisted. It has a strong umami taste. It is like a Western sake. Combined with bonito, the twisting feeling disappears and it becomes smooth. I learned on this trip that bonito tataki is better with salt than with ponzu (Japanese citrus juice) 🎉. Hozumitei @ Uwajima 20240517

Hi hoshiaki. 😊 Salted bonito tataki, high in minerals. I recommend coarse salt. I think the taste will be too sharp if you use normal salt. If you use regular salt, the taste will be too sharp. I love it 😓. I can't stop drinking sake😍.

Thank you for your comment, Pon😊I was very satisfied with Hozumi-Tei. This time I was in a private room and couldn't talk much with the restaurant staff😅I would like to hear more about it if I visit again. I stayed in Nakamura, Uwajima and Matsuyama 😆.
