It has a mild, aged aroma slightly reminiscent of tamari soy sauce. It has a mellow, glossy quality with just a hint of chilli. The nose has a mildly bitter and alky aroma, and the taste on the nose is similar to rum raisins or bitter chocolate. It is a rich, umami type that slowly spreads its richness and umami. Although the alcohol content is 18%, it is so soft on the palate that you can easily drink it again and again, sipping it little by little.
I would like to drink a daiginjo someday.
