It's from Itsumi Shuzo, the smallest of the five breweries on Sado Island.
It's a limited edition Itaru No.7 Yeast Junmai Genshu, freshly brewed.
It seems that 1801 yeast or Niigata G9 yeast is used for the regular Junmai-shu, but I wonder what kind of yeast is used here.
Dark, sweet, gorgeous aroma, banana?
A moment after I felt the sweetness on the palate.
A stimulating sourness that comes tangy from the tip of the tongue
When it settles down, it has a subtle sweetness and a deep delicious taste.
It has a crisp aftertaste that goes down your throat.
It finishes with quite a dry taste.
The alcohol content is high, but it is refreshing and easy to drink.
It is easy to drink without getting tired of it.
If you warm it up, the acidity becomes softer, which is also delicious.
It's quite different from the solstice I'm used to drinking. Interesting.
