Wazo Sake Brewery, a sake brewery in Futtsu City, Chiba Prefecture, has a direct sales office on the outskirts of Kimitsu City, which I visited after eating Takeoka Ramen. The brands include Takeoka, Seisen, and Shikanozan.
This sake is only listed as Wazo, but looking online, it seems to be from the Shikanoyama series, so we check in here.
The aroma is mild, and when you drink it, it has a slight piquancy and great umami, which spreads in your mouth. It has a delicious acidity that is refreshing from the umami.
If I go to a sake brewery, I would still choose the freshly pressed sake 😁.
