I enjoyed a little of the miscellaneous sake from the same series that I drank when I brewed my previous plum wine, so I bought some Omachi. I wanted to drink it at room temperature, so I left it raw for a bit. The aroma is of soy sauce, mirin, and rice. When you drink it, you can taste the sweetness and the sourness that comes through slowly, and the aftertaste is savory and sweet, like dashi or soy sauce. The aftertaste is savory and sweet like chocolate. It has a high alcohol content, which makes you feel a little bit sick, but you can't help but drink it slowly! Drink it slowly over a few days. When served cold, the sweet and sour sourness and the mildness of the soup stock make it much easier to drink than one would expect. When hiya-dashi, the sourness rounds out a bit and the sake is soft and mild. When heated, it is like cooked rice, with a hint of mitarashi. The change in temperature is also delicious. At the end of last month, on the second Ox day of the year, I drank it with eel and it went great with it! The savory and sweet sauce goes perfectly with eel, and I want to drink it with eel again. I've been dancing to Gennai Hiraga's tune every year, but I can't help it because it's so delicious.
