This sake is brewed with Daiyomori's original Yamahai brewing method.
Shinzei is a Zen expression for summer: "If your mind is quiet, your body will be cool.

It has a refreshing sourness, a sweetness and a tangy refreshment.
It is a fresh, unpasteurized sake.
Even though it is undiluted, it is only 15 degrees alcohol, so you can gulp it down.
