My mother thinks, and I also think, Toyobai has too beautiful a label. The label also expresses well the harsh yet beautiful Tsugaru snow. I like the label of Toyobai.
The aroma is very conveying the apple-like sweetness of Tsugaru, and it gives me a sense of security. On the palate, Toyobai is like a smooth, gravity-defying, slightly sweet brewed water. I really love it. The gaseousness of the sake is moderate for a draft sake. It is surprising. The spiciness is moderate, and the sweetness of apples is moderate. Still, it has a nice sharpness and a cohesive aftertaste, which is great.
Aomori's local sake, especially Toyobai, is a sake that combines the sweetness of the brewing water and the sharpness of the sake. I think that Aomori's sake is easy to learn to drink for beginners.
Lastly, Koujiya Sake Shop in Jimbocho, where I usually go to buy Toyobai, has a large selection of Toyobai, but they also have a large selection of Taishinshu sake. You can find most of the limited edition sake that Koujiya usually carries, so don't be afraid to ask even if you don't see it on the shelf.
