A sake called "Hakurei02." It reads "Hakurei Zero Two."
Malic acid and citric acid are used, and they bring out the acidity and umami well. In a sense, it is a sake that is not like sake. It is designed to be sweet, with a sake strength of -22, but the acidity gives it a nice sharpness, so you will not get tired of drinking it.
Despite its fruity and sweet taste, this sake is perfect as a food sake. It is a perfect match for lemon-based foods.
