Weak sweetness, fine acidity and mild bitterness.
At first it feels dry, but soon you can taste the umami of the rice, and the balance is very elegant and gorgeous without being overpowering.
It leaves a good aftertaste.
I personally prefer Tobiroki's special junmai, which has a bit more umami, but the junmai daiginjo is also delicious!
My personal impression of Tobiroki is "a perfect balance of gorgeousness and umami.
I can easily recommend Tobiroki for those who want a beautiful sake.
