When I invited friends over for drinks at my house over the weekend, they brought me a Hakkaiyama three-year old bottle stored in a snow cellar.
Hakkaiyama has always been one of my favorite brands, but this was my first time to taste a Junmai Daiginjo with three years of snow chamber storage!
When I buy sake on my own, I tend to buy sake from the same brewery and with similar tastes, but at a gathering of sake-loving friends, it's fun to have sake that I don't normally drink!
Hakkaisan is a dry and strong sake that I often get when I want to get drunk, but this Junmai Daiginjo, which has been in the snow cellar for three years, is a mildly dry sake with a nice square taste!
At first, when served at a cooler temperature, it tasted more sharp than sweet, but as the temperature gradually rose, it blossomed.
The mildness is still there, but the sweetness and the umami are softer and the lingering taste is more enjoyable than the sharpness.
It is a bottle that can be enjoyed by both those who like dry wine and those who like sweet wine more than dry wine.
