When the bottle is opened, there is almost no gassiness.

Slightly sweet strawberry-like top note
The modest fruity aroma, full sweetness, and firm but soft umami of the rice spread out with modest acidity and a slight bitterness in the back, with a slight spiciness from the fluffy alcohol, leaving a lingering sweetness that is quickly quenched.
It is a mellow, yet gently balanced sake with a beautiful impression that goes well with meals and is of course delicious on its own.
It goes well with grilled kipper, braised isotsubu (salted), marinated Maltese bluefin tuna, and braised chicken liver in red wine.
It also went well with Aiba Manabu's recipe for "sauteed pork and tomato with ketchamayo" and grilled maitake mushrooms with butter and soy sauce.
The cold storage bag that came with the book at the time of purchase continues to be useful for the drinking bottles in the natural refrigerator on the balcony.
